Back to school time is one of my favorite times of year. Mostly because it means 8 hours of glorious freedom from bickering small people. During the summer, lunch time is basically a free for all. Oh you ate three grape popsicles for lunch? Cool, you stayed hydrated and *maybe?* had a serving of fruit. Don't get me wrong, my kids eat. But it's just not structured like back to school time.

One of my go-to's to both kids is a DIY lunchable. It save me money because I typically already have crackers cheese and lunch meat on hand! And the kids like making their own "sandwiches". Here's a good link to some more delish lunches
